Ingredients

  • 1 egg
  • 1 egg white
  • 1 tablespoon skimmed milk
  • 1 tablespoon chives, chopped
  • 1/4 cup red pepper, diced
  • 1 tablespoon maple syrup
  • Salt and pepper
  • 1 small tortilla (15 cm / 6″)

Method

  1. In a bowl, whisk the egg, egg white, milk and maple syrup. Season with salt and pepper.
  2. Pre-heat a nonstick frying pan over medium heat, then add the egg mixture. Stir continuously with a wooden spoon until the eggs are cooked.
  3. Remove the pan from the heat. Add the chives and peppers. Leave to cool for a few minutes.
  4. Spread the filling down the centre of the tortilla and roll up tightly
